Ingredients

  • 16 oz Sour Cream Full Fat
  • 8 oz Cream Cheese Full Fat, softened to room temperature
  • 14.75 oz Fire Roasted Corn Drained
  • 10 oz Can of Rotel Drained
  • 1 cup Cheddar Shredded
  • 1 oz Taco Seasonings 2 tablespoons

Instructions

  • Add all the ingredients to a large bowl and mix well. Serve immediately or chill in the refrigerator for a few hours.

Notes

  • If you can't find fire roasted corn in the grocery store, you can use a can of regular corn.  
  • Make sure to use full fat cream cheese and full fat sour cream.  Low fat or fat free options tend to have more water and will change the texture and flavor of the dip.
  • If you have homemade taco seasoning, use that! You'll want two tablespoons.
