Ingredients

  • 4 cups Fresh Broccoli Finely chopped
  • ½ cup Carrots Shredded
  • ⅓ cup Dried cranberries
  • ¼ cup Sunflower seeds
  • ½ cup Mayonnaise Full fat is best
  • 2 tablespoon Apple cider vinegar
  • 2 tablespoon Honey or sugar
  • Salt and pepper to taste

Instructions

  • Add the chopped broccoli, carrots, cranberries, and sunflower seeds to a large bowl.
  • In a separate bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper.
  • Pour dressing over salad and toss to coat evenly. Chill at least 1 hour before serving

Notes

  • Cut the broccoli into small, bite-sized florets for the best texture.
  • Give the salad at least 30 minutes in the fridge so the flavors.  This helps the salad brighten and flavors come together.
  • Stir in nuts or seeds just before serving to keep them crisp.
  • This salad holds up well in the refrigerator, making it perfect for meal prep or gatherings.
