Why This Broccoli Crunch Salad Recipe Works
It's no bake and no cook. Just like all of my recipes, you need to chop, whisk, and toss. Perfect for busy weeknights.
Finely chopped broccoli makes it easier to eat. Smaller pieces soak up more dressing and are easier to eat than big florets.
Carrots add color and natural sweetness. A simple upgrade most broccoli salads skip but has become a favorite ingredient in this salad.
The dressing is balanced. Mayo for creaminess, apple cider vinegar for tang, and a touch of sugar or honey to round it out.
It's a make ahead side. Chilling lets the broccoli soften slightly and the flavors come together.
No bacon required. It's lighter and simpler, but you can add it if your crew loves it (see variations below).
Ingredients to Make Broccoli Crunch Salad
- Fresh broccoli florets. You'll want to look for firm, bright green heads with tight florets. You can use the peeled stems too so nothing goes to waste.
- Shredded carrots. If you can, grab a bag of the store-bought shredded carrots to save time. Chop them a bit smaller if they're long.
- Dried cranberries. Sweet, chewy, and colorful. Raisins work too. If you have some extras, make a cranberry pecan cheese ball with the extra craisins.
- Sunflower seeds. Use roasted and shelled. Salted or unsalted both work; just adjust the salt in the dressing.

- Sugar or honey. I prefer honey in this because it mixes in much better.

Substitutions and Variations
- Add bacon. This recipe is of course no cook, but bacon makes everything just a little better! Stir in ½ cup crumbled cooked bacon for a smoky, salty bite.
- Add cheese. Shredded sharp cheddar or crumbled feta makes it heartier.
- Swap the seeds. Try pepitas (pumpkin seeds), sliced almonds, chopped pecans (after you make pecan pie dip!), or cashews.
- Nut free. Sunflower seeds and pepitas are both seeds, so this stays nut free as written. Always double check packaging if you're cooking for allergies.
- Swap the fruit. Raisins, golden raisins, chopped dried cherries, or diced apple for a fall twist.
- Lighten the dressing. Replace half the mayo with plain Greek yogurt. I love adding Greek yogurt to my dressings. Greek yogurt ranch is one of my favorites.
- Add red onion. A few tablespoons of finely diced red onion adds sharpness. Soak it in cold water for 10 minutes to mellow the bite.
- Make it a meal. Top with grilled chicken for an easy lunch.
- Use a broccoli slaw shortcut. Bagged broccoli slaw works if you're short on time. Trader Joe's has a great one and most grocery stores usually stock some sort of broccoli slaw.
How To Make Creamy Broccoli Crunch Salad

Step 1
Prep the broccoli. Rinse the broccoli and dry it really well (a salad spinner is great for this). Finely chop the florets into small, bite size pieces. Add the broccoli, shredded carrots, dried cranberries, and sunflower seeds to a large bowl.

Step 2
Make the dressing. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar or honey, salt, and pepper until smooth.

Step 3
Toss. Pour the dressing over the salad and toss until everything is evenly coated. Cover and refrigerate for at least 1 hour before serving. Give it a quick stir and taste for salt before serving.
Tips and Tricks
- Dry your broccoli completely. Wet broccoli waters down the dressing and makes it runny.
- Use a food processor. Pulse the florets a few times for quick, even, finely chopped broccoli. Don't overdo it or it'll turn mushy.
- Don't toss the stems. Peel the tough outer layer and finely chop the tender inside.
- Want softer broccoli? Blanch the florets in boiling water for 30 to 60 seconds, then plunge into ice water and dry well. Great for little ones or anyone who prefers less crunch.
- Keep the seeds crunchy. If making ahead, stir in the sunflower seeds right before serving.
- Taste after chilling. Cold dulls flavor, so adjust salt, pepper, or vinegar just before serving.

What to Serve with Broccoli Crunch Salad
This salad goes with just about everything! I love serving it with grilled or rotisserie chicken, burgers, pulled pork sandwiches, ham, sloppy joes, or a holiday turkey. It's also perfect for cookouts, potlucks, and baby showers. There's really nothing this salad won't work with!

Storage Instructions
Store leftovers in an airtight container in the fridge for up to 3 to 4 days. The broccoli will soften a little over time, but it stays delicious.
This is a great make ahead recipe too! Prep the chopped veggies and dressing up to 2 days ahead and store them separately. Toss together 1 to 2 hours before serving and add the sunflower seeds last.
I don't recommend freezing this salad, just like I would not recommend freezing most salads! Mayo based dressings separate, and the broccoli turns watery once thawed.
A note about serving this salad. Because of the mayo, don't leave this out at room temperature for more than 2 hours (or 1 hour on a hot day). Serve it in a bowl set over ice at outdoor events.
